About the Event
Learn to re-use kitchen scraps for container gardening. We will also plant radishes from seed. We will make radish slaw, sautéed radishes and jackfruit/mushroom tacos.
For this class you will need:
For Container Garden:
- Radish seeds, pot or container at least. 4 inches deep
- Food scraps like onion bottoms, bottom 2-3 inches of scallions, bottom 3 inches of celery, 1-2 inches of carrot tops, and/or basil.
- Containers for water to hold the plants to start rooting.
- Potting soil, enough for the containers you have available
For Cooking:
Cutting boards, 2 large sauté pans, medium/large bowl, cutting knives, spatula, cooking spoons, colander, measuring spoons, measuring cups
Jackfruit Tacos
- 2 20-ounce cans jackfruit in water (NOT in syrup), if you can’t find it in water then canned in brine will also work OR canned mushrooms (oysters work well) OR fresh mushrooms (2.5 pounds) OR whatever meat substitute you have available
- 2 tablespoons oil (avocado, coconut oil, grapeseed) (if avoiding oil, sub water)
- 1 medium white or yellow onion (thinly sliced)
- 4 cloves garlic (minced)
- 1/2 teaspoon sea salt
- 2 tablespoons ground smoked paprika or sweet paprika
- 1-2 tablespoons ground cumin
- 2 tablespoons chili powder
- 2 tablespoons tomato paste
- ½ cup water or vegetable broth
FOR SERVING optional
- 8 Corn or flour tortillas or taco shells
- Avocadoes
- Guacamole
- Chopped romaine lettuce
- Shredded red cabbage
- Fresh Cilantro
- Lime wedges
- 1 15-ounce can refried pinto or black beans
- Salsa
Sautéed Radishes
● 1 tablespoon olive oil, grapeseed oil, avocado
● 20 medium, ends trimmed and radishes cut in half (¼ -½ inch circles) radishes (can use large radishes and cut into fourths)
● 1⁄4 teaspoon sea salt
● 1⁄8 teaspoon black pepper
Radish Salsa
● 1 bunch red radishes
● 4 scallions, minced
● 1 tablespoon minced jalapeño
● 2 tablespoons minced fresh parsley (dried parsley flakes will work too)
● 1 tablespoon freshly squeezed lemon juice (can use apple cider vinegar)
● 1⁄4 teaspoon sea salt or pink Himalayan salt
● 1⁄8 teaspoon black pepper
